I have spent the past week in the most beautiful surroundings. I have to say I never believed I would take to a snow holiday (after all I hate anything cold) but I really did love it and I actually managed to ski down numerous mountains without breaking any bones or injuring myself at all! As we all know- mum’s are always right! My mum convinced me I would enjoy myself and she was right. It was a fabulous holiday with wonderful people.
Here are a few of my favourite photos. The one of my as a Penguin makes me laugh-I had skiied for over 5 hours and was literally exhausted and fell into the chair. I refused to move until there was pudding being offered!!
Right now it’s the first week in February, which means we are into the 5th week of the year. Research shows that by this time most of us have given up on our New Year Resolutions… Well I am pleased to say my resolution is going well. I wanted to actually make some of the things I pin- especially food. After a week away with some delicious food, I wanted something light and healthy but still incredibly tasty. So like all of us crafty people, I turned to Pinterest and found a Goat Cheese and Carmalised Onion Tart. It was YUMMY! Here is the original recipe. I didn’t add the Borsin Cheese because I wanted to have the pure taste of Goats Cheese. I made a simple salad to go with the tart and a glass of Malbec to wash it down with!
